A few years ago I became obsessed with baking. It lasted about a month or two and eventually died out. It became something I only did on really rare occasions. When we moved into our new house one of my favorite rooms became the kitchen. I wanted to cook more, bake more & make use of the amazing new kitchen we had.
Spending time in the kitchen with a toddler around does not always prove to be easy. Between the kitchen floor becoming a race track and the constant “don’t cook it mama” complaints I generally lean towards making whatever is the easiest for that given meal. We got to the point where we switched to pancakes because even Mickey Mouse waffles took too long some mornings.
This past weekend I asked little man if he wanted to help me make the pancakes. Suddenly, the kitchen was a brand new playground. We pulled up a chair & he helped me add the sugar, flour, baking powder, etc to the mixing bowl. We only had to wait a few minutes & the pancakes were ready. He spent the rest of the day talking about how we made pancakes (and then insisted that he wanted them for dinner that night).
I have saved off a number of recipes from various mommy blogs over the last few years saying “someday I’ll make these.” Last night I decided this week to bring my little helper back and make some brownies. It has been way too long since I made them from scratch and this Double Chocolate Homemade Brownie recipe from The Taylor House caught my eye.
Little man pulled up his chair & we got to work on our double chocolate brownies. A bag of chocolate chips, broken mixing bowl & one hour later we had fresh warm brownies straight from the oven.
The process wasn’t quick, but he had fun & I had fun watching him get excited about the brownies. Although, with a 30 minute wait time it was rough to keep him busy while the baked.
I think it’s time to pull out a few more recipes over the next few weeks. But first, I need a new mixing bowl.
