It is that time of the year again. The colds have started, the germs are running wild & pretty much everyone in our house has been sick for at least a week over the last 4 weeks. For the most part we all still are.
Something about being sick screams “chicken noodle soup” to me. I spent half of my week last week thinking about it and I finally gave in and made some chicken noodle soup in the crock pot.
I followed the Slow Cooker Chicken Noodle Soup Recipe from Cooking Classy and it hit the spot!
The best part about this recipe is for the most part I was able to just use what I had in my pantry. I didn’t need to run out and buy anything.
The soup went into the crock pot in the morning and I stopped home at lunch to add the noodles & grab some soup for a quick little lunch.
Here is where I made a mistake.
The recipe calls for it to cook for 6-7 hours. It had been about 6 hours when I added the noodles. Due to my commute I had about 20 minutes at home while the noodles cooked. They were JUST about done, but not quite done so I flipped the crock pot into “keep warm” mode and let it go for the afternoon.
By the time I got home in the evening my noodles had pretty much dissolved into mush.
Note to self, next time just turn it off!
Alterations
- I’m not a huge fan of onions so I actually just added a little bit of onion powder instead of adding the medium yellow onion.
- Left out the Olive Oil (It was buried somewhere in the pantry and I couldn’t find it, yup I’m that lazy)
- Switched the egg noodles for shells because is it is what I had in my pantry. Again, I am that lazy!

Would I Make it Again: You bet, two weeks from now when the next round of sickness hits our house it will be back in the crock pot.
Kid Friendly: Very much so! My little guy enjoyed it and kept telling me he was eating “hickin” Trust me, there are days when that just simply would not happen!
Things I Would Change Next Time: Follow the cooking instructions and really only leave it in for a few hours.
