So if you know me you know that winter bring out my biggest weakness, peppermint. I don’t know what it is about peppermint but I cannot get enough of it. Peppermint lotion, peppermint candy, peppermint cookies…. Add chocolate into the mix and well game over… I’m sold on what ever it is.
Spending the bulk of last winter pregnant slightly added to my peppermint problem. By slightly I mean I had people concerned about the amount of peppermint that was consumed every day.
My all time biggest weakness this time of year is a peppermint mocha. Starbucks and McDonald’s (the ones that carry it) make a large sum of money off of me.
Last year while browsing pinterest for a cute gift for coworkers I came across this recipe for peppermint hot chocolate. While the recipe is amazing I adapted it slightly to add more of the milk and less of the strong cocoa taste that you get from it. Of course I also had to make sure more peppermint got added.
So for an extra milky/peppermint twist here is my adaptation of peppermint hot chocolate:
- 3.5 Cups Non Fat Dry Milk Powder
- 1.25 Cups Unsweetened Cocoa Powder
- 1.25 Cups Sugar
Mix together in a bowl and seal up in a container. From here I grab a formula scoop (equivalent to 1 tablespoon) and take 3 and a half scoops of peppermint hot chocolate in a mug. Throw a mini candy cane into the bottom of the cup and add 12oz of hot water. I prefer to top this off with marshmallows but I know some people prefer to enjoy hot chocolate without them.
The original recipe suggests breaking it up into bags to share with friends and family. To be realistic, my coworkers and I go through at least one of these containers a week. Share if you dare.
