You say Buffalo Chicken anything and I am immediately your best friend. I have a slight problem with anything related to buffalo chicken (I mean Buffalo Chicken Dip is hands down my favorite…. but that’s for another day). I ran across this recipe on Organize Yourself Skinny for the Buffalo Shredded Chicken and I can’t begin to sign it’s praise enough! I’ve actually convinced three coworkers to make this since originally making it!
The first night we had this we ate it on hamburger buns. That was pretty good but nothing too special. I took it 3 days for lunch to add to the top of my salad and oh boy would I recommend that! It was delicious. I would make this on Sunday’s just to have for the week to go with my salad, hands down. We also tried it one night on saltine crackers (we will try almost anything on saltine crackers). It was pretty good that way but my favorite was on top of the salad.
