I love my crock pot. There is no doubt that one of the most used appliances in our house is the crock pot. Chances are if I find a recipe that can be thrown together in 5 minutes before I leave for work and ready when I get home I will try it. Last Fall I came across a recipe on Skinny Mom for Chicken Tortilla Soup. It has been added into our rotation every few months and I can’t help but tell the world about it. Just ask my co-workers, I talked about it at least three times last week.
Why I Love The Skinny Chicken Tortilla Soup
Chicken Tortilla Soup pleases multiple types of people. You can make it as spicy or as mild as you want. Love spice? Add jalapeños. Not a fan of spicy, leave them out and you have a mild soup. We add tortilla chips crushed on top of the soup and a few on the side to dip. They are an awesome addition. You the the simplicity of a soup with the crunch of something more.
Alterations
As I have evolved in making this recipe over the last year, I’ve made a few small changes, but nothing major. The biggest one is the jalapeños and lime juice. I actually don’t wait until the soup is fully cooked to add them. As I’m throwing all of the other ingredients into the slow cooker, I add in the lime juice and chop up the jalapeños. The two add a little bit of sour and a lot more spice as the broth soaks both up.
I’ve also found that making a bowl of guacamole is a great side dish to go with the chicken tortilla soup.
Kid Friendly
If your child likes spice, I would say go for it. Even without adding the jalapeños in from the start the soup has a little bit of a kick to it. Little man likes to take the chips away from me, but will not touch them if they have been in the soup already.

I’m always on the lookout for more slow cooker soup recipes this time of year. We’ve never made chicken tortilla soup before but I think my family would love it. Thanks so much for sharing the recipe! I especially like the idea of adding a side of guacamole with this.
